Cucumber Boats

Cucumber (a nice size)

1 oz crumbled feta cheese

1 teas fresh dill (or parsley; I used the freeze dried jar of fresh dill in the fresh fruit and veggie part of my grocery store)

salt and pepper

 

Slice cucumber lengthwise in half. Use a spoon to scoop out seeds to make the "boat." Dice up one half of the cucumber and mix in a bowl with the crumbled feta cheese, dill, and salt and pepper to taste. If desired, cut a small strip off the bottom of one side of the boat so that the half will set level. Fill the boat with the mixture.

 

Pick it up like a sandwich and eat it like lunch for one or cut in slices for an appetizer.

With the leftover mixture, if any, use it in the middle of a sandwhich. Oh yum! Okay, maybe just make it and cut up both sides and use it on top of your sandwiches instead of lettuce. Can you imagine it on top of chicken salad?
